These additives are complex mixtures and have a high molecular weight. These factors prevent their direct analysis in complex food samples using readily-available techniques. The method determines the total content of sucrose esters in a food sample but it is nopt rapid and it cannot identify and discriminate between individual sucrose esters when present as a mixture.
