Nutrient survey of flours and grains - analytical report

The objective of this project was to provide up-to-date and reliable information on the nutrient composition of a range of flours and grains. It updates information on those foods that have been previously analysed, and provides information on new products, which have become more popular and widely available in recent years.
The results of the study will be incorporated into the Agency’s nutrient databanks for the National Diet and Nutrition Survey and the Expenditure and Food Survey, and will also be incorporated into future publications in the McCance and Widdowson’s The Composition of Foods series.
399 samples of flours and grains were purchased in the Southeast England region of the U.K. from a range of retail outlets according to a sampling protocol agreed with FSA officers.
